Poha is a quick and easy snack made with flattened or flaked rice and popular in through out India. Rice is parboiled and flattened which reduces the cooking time.
Ingredients
Poha - 250gms
Coriander leaves - 1/2 cup
Onion - 1
Green Chillies - 3 -4
lime - 1
Curry leaves - few
Cumin seeds - 1 tsp
Mustard seeds - 1/2 tsp
Urad dal - 1/2 tsp
Chana dal - 1/2 tsp
Turmeric powder - 1/2 tsp
Oil - 4-5 tbsp
Salt as per taste
To prepare dice the Onion, chillies and chop the coriander leaves. Juice the limes.
Wash the poha and drain the water completely, this should be done as quickly as possible to ensure the poha doesnt absorb too much water.
Heat 4-5 tbs of oil and add the whole spices and curry leaves when hot, once they crackle add the diced onions and green chillies.
Saute the onions until soft and golden brown.Add the turmeric powder.
Add the poha and mix well.
Add the lime juice along with salt.
Add the chopped coriander leaves. Cook for another minute.
Mix well. Adjust seasonings if required and serve.
