This quick vegan snack can be made in jiff and is quite nutritious. Traditional recipe doesn't call for rice flour, as legume proteins tend to be incomplete it is always best to complement it with protein source from another source like grains or dairy.
Besan (chick pea flour)- 360g
Rice flour - 120g
Tomatoes seeded and diced - 2
Onion diced- 1/2 to 1
Cilantro chopped fine - 1/4 bunch
Green chilies diced - 2-4
Turmeric - 1/4 tsp
Salt and pepper as per taste
Water - 2 cups
Butter or oil for panfrying
Combine the flours in a large bowl, add the diced vegetables, cilantro, green chillies and the spices.
Add water and whisk it to a smooth batter. Batter should be pourable consistency.
Heat a pan add butter or oil. Pour the batter on to the pan using a ladle. Cook on both sides until done.
